Ceylon Cinnamon is native to Sri Lanka, an island off the southeast coast of India which was formerly known as Ceylon. Ceylon cinnamon is considered a premium cinnamon, both for flavor and health purposes, and is commonly referred to as 'true cinnamon.' Ceylon cinnamon is much less common than Cassia cinnamon, which is readily available in stores. Unless cinnamon is specifically labeled Ceylon cinnamon, it is safe to assume it is Cassia cinnamon.
Ceylon has a sweeter and more complex flavor than cassia cinnamon, but also important health advantages. Ceylon cinnamon contains much lower levels of coumarin, which is a natural chemical that can be toxic to the kidneys and liver, and it is not recommended to be taken in high doses. There are no known side effects of Ceylon cinnamon consumption, although like most spices or medicinal supplements, it is recommended to be used in moderation, and consuming higher serving sizes is not considered to be more beneficial.
